Butternut Squash Side Dish


Butternut Squash makes a delicious side dish! It is very simple to make and bakes while you are getting the rest of dinner ready. One less thing to worry about! This side dish is perfect for Thanksgiving or Christmas dinner, when butternut squash is in season.


 

Butternut Squash Side Dish

Ingredients:

Squash Side dish1 organic butternut squash
3 cloves of organic garlic (sliced)
1 tbsp fresh organic parsley
1 tbsp fresh organic cilantro
2 tbsp organic coconut oil (melted)
¼ to 1/3 cup of organic honey
Himalayan Salt
Pepper


 

Method:

1 – Preheat oven at 400 degrees

2 – Cut butternut squash length-wise, scoop out seeds, peel and cut in cubes (preferably all around the same size to cook evenly)

3 – Incorporate cubes in a deep oven dish and pour melted coconut oil on top.

4 – Sprinkle garlic, herbs and spices on top.

5 – Bake for 35 minutes, mix then pour honey on top, and bake for another 25 minutes for a total 60 minutes (bake between 45 minutes to 1 hour depending on the size of cubes and desired softness).
