Chickpea Curry Salad


We often find ourselves out of ideas for healthy lunch options. This salad takes 10 minutes to put together, is loaded in protein and guilt free. Since it doesn’t need to be heated up, it is perfect for work or school.


 

Chickpea Curry Salad with Miessence Fast Tract Probiotics

 

Ingredients:FT Chickpea Salad

19 oz can organic chickpeas, drained and rinsed
1 organic red bell pepper (diced)
1 TBSP organic yellow onion (minced)
1 TBSP fresh organic cilantro OR organic cilantro paste
2 TBSP freshly squeezed organic lemon juice
3 TBSP extra virgin, cold press organic olive oil
2 TBSP Fast Tract Probiotics
Himalayan salt to taste
Medium curry powder to taste


 

Method:

1 – Mix all the ingredients in a medium/large bowl.

2- Refrigerate the salad for at least one hour, preferably 4 hours.

3 – Take out of the refrigerator 10 minutes prior to serving, to allow the olive oil to liquefy at room temperature.

4 – Serve and enjoy!
